In what world is veal cheaper than chicken?
Apparently in Betty Crocker’s mid-century world, that’s what.
Under the recipe for chicken salad (which hasn’t changed at all: cooked chicken, mayo, celery, salt and pepper and a bit of lemon juice), there is a recipe for “Mock Chicken Salad”.
“A delicious and economical substitution for the real thing… when chicken is high and veal not so expensive. Follow “key” recipe above — except, in place of the chicken, use cut-up cooked veal.”
